Sodium acid pyrophosphate (SAPP) is a common ingredient in baking powder. It is a white, odorless powder that is soluble in water. SAPP is an acidulant that reacts with baking soda (sodium bicarbonate) to produce carbon dioxide gas, which helps dough and batter rise.
