It must be pot distilled, which must be double distilled.
Single malt Scotch whisky must be made entirely in Scotland, with nothing but malted barley, water and yeast.
The first distillation begins in a 'wash' still. alcohol boils at a lower temperature than water so that the spirit vaporises.
The second distillation is similar as the first distillation but with more of the water being left behind as the alcohol vaporises up the still, but as there are no solids in the still to start, so spirit stills don't have sight glasses in their necks.
